Ingredients
- 12 ounces low-fat small curd cottage cheese
- ½ (.6 ounce) package sugar-free lime-flavored gelatin (such as Jell-O®)
- 24 ounces crushed pineapple, well drained
- 1 (8 ounce) container frozen whipped topping, thawed
Instructions
- Combine cottage cheese and gelatin in a bowl and stir until well combined. Add drained pineapple and mix well. Fold in thawed whipped topping.
- Cover and refrigerate until set, 2 to 3 hours.
- You can use any flavor of sugar-free gelatin instead of lime, e.g. orange or strawberry-banana.
- You may add other ingredients such as coconut, mandarin oranges, mini marshmallows, or even chopped nuts.

Very good! I used 16 ounces low-fat small curd cottage cheese, instead of 12 ounces and the entire box of cherry-flavored gelatin plus a 12 ounce bag of frozen sweet cherries. Tasted it before allowing it to set and it was delicious. I’ll be making this again!!!!!
I was given this recipe back in the 70’s. It’s really good and refreshing. Good side dish.
