Ingredients

  1. 2 cups all-purpose flour
  2. 2 cups white sugar
  3. 2 teaspoons baking soda
  4. 2 large eggs
  5. 1 (20 ounce) can crushed pineapple with juice
  6. 1 teaspoon vanilla extract
  7. 1 (8 ounce) package cream cheese
  8. ½ cup unsalted butter, softened
  9. 1 ½ cups confectioners’ sugar
  10. 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-baking dish.
  2. Mix together flour, white sugar, and baking soda for cake in a large bowl and make a well in the center. Add eggs, crushed pineapple with juice, and vanilla; mix until well-combined. Pour into the prepared baking dish.
  3. Bake in the preheated oven until a toothpick inserted into cake comes out clean, about 45 minutes.
  4. Meanwhile, combine cream cheese and butter for frosting in a mixing bowl; beat until smooth. Add confectioners’ sugar and vanilla; beat until creamy.
  5. Spread frosting on warm cake.

Rubbery is the right description in my mind. I love pineapple, but this cake lacked the texture and pineapple flavor that I was expecting, especially since I used 24 oz of crushed pineapple (and juice) instead of 20 oz. I was thinking that cake flour might be better than all purpose flour. But having seen some of the reviews I think I may try it again with Krusteaz waffle mix, which I frequently use. And I will definitely add some coconut and nuts next time. BTW, I did not use icing, and cut the sugar in half. It’s a sugar thing!

I am sorry, I normally do not comment, but felt like I had to this time. This was my first attempt at pineapple cake, I had a fresh pineapple and thought I would make something with it. I won’t do that again to a fresh pineapple. This is not like normal cake, might have been good as a loaf bread maybe. It does look like this image in the video.

I’m really happy I came across this recipe. However, I made this with pancake mix to use up the big bag I got at Costco. 2 cups of Krusteaz pancake mix. 1/4 cup of sugar because there is already sugar in pancake mix. Skipped the baking soda because there was already leavening agent in pancake mix. 1/4 of melted butter added to batter and mixed it in; this just added a bit more fatty moisture to the cake. I tried it without at first but thought it was missing some butteryness. Then added coconut flavoring to the cream cheese icing with shredded coconut on top. Turned it into a kind of pina colada cake.

I made the cake exactly like the recipe. I did not modify or add anything to it. The cake required more cook time in my oven, but that’s not a big deal, I just kept checking it every 5 minutes. It is a sticky cake, but came out of the pan without falling apart. Was moist enough. Loved it! I added shredded coconut and maraschino cherry juice to the frosting along with extra sugar to make a larger amount so I could frost bother layers. It was fantastic. So easy to make. I will definitely make this again! Thank you!!!

Husband and I love this. It’s really easy to make. Only thing I changed was more powder sugar. He loves thick frosting. Plus my cake was so moist the very top chips off a tiny bit. Adding more powder sugar gave more frosting to camouflage the crumbs.

Didn’t have crushed pineapple, only tidbits, so ran them through a blender. 45 mins in my oven and it wasn’t even half baked. Took another 15 mins. Overall came out spongy but really rubbery and it’s as dark as pumpkin bread. Tastes good though. Added shredded coconut and half a 2nd can of pineapple to the icing. Also tasted good.

I made this cake b/c I had pineapple on hand and I was craving something sweet that I could whip up easily. I wanted to use up the pineapple and was happy this recipe called for few ingredients. However, the taste and texture is not like regular cake. This cake came out sticky and wet with a very mild flavor. It was certainly very easy to make but I wanted cake. This recipe reminded me of sticky rice.

Sorry, but this recipe didn’t turn out well at all. It was way too sweet (even after cutting sugar down to 1.5 cups), could have used a bit of salt, and there was almost no pineapple flavor. It cooked properly, but in 30 MINUTES as some mentioned. The texture was fine and so easy to make but the lack of flavor so disappointing. Won’t try it again, even with recommended tweaks.

Very good recipe, even though I did what a previous reviewer did. I cut the sugar in half and used a stick of butter. The family loved it. It was very moist. I also added some Walnuts n Coconut Flakes. Very tasty cake

There is not a lot of things my husband spits out that I make but he did not like this. Texture was off and tasted bad. 40 minutes at 350° would have burnt it to a crisp. I took it out a 25 minutes and it was over cooked. Do not waste your time or money on this recipe.

No rising, tastes like baking soda – 2 teaspoons is way too much – the sugar is too much as well – 1 cup would have been plenty. Sort of a waste of ingredients.
