Ingredients
- 1 (15.25 ounce) package yellow cake mix
- 1 cup water
- ⅓ cup vegetable oil
- 3 large eggs
- 1 (16 ounce) container vanilla frosting
- 3 ¾ cups flaked coconut
- 30 small jellybeans
- 4 sticks red licorice
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease the sides and bottoms of two 9-inch metal springform pans.
- Beat cake mix, water, vegetable oil, and eggs in a large bowl with an electric mixer on low speed until moistened, about 30 seconds. Increase to medium speed and beat for 2 minutes. Pour into the prepared pans.
- Bake in the preheated oven until a toothpick inserted in the centers comes out clean, 23 to 2 minutes.
- Cool in the pan for 15 minutes, then remove cakes from the springform pans and cool completely, about 20 more minutes.

- Place one cake on a serving tray, forming the bunny’s head.
- Cut 2 convex-shaped ears from each side of the second cake, and place them on each side of the head to form ears. Place the remaining concave-shaped piece about 1/2 inch below the head for the bowtie.

- Frost the entire bunny cake with vanilla frosting; pat the cup coconut evenly over top and sides. Decorate the bunny face and bowtie with jellybeans and use licorice to make whiskers.

Everyone loved this fun cake! I made my homemade carrot cake which is very moist and delicious. Vegan cream cheese frosting for the ears to accommodate 2 kids, regular cream cheese frosting on the rest, no coconut on the bow tie for my husband. Pastel peanut M&Ms and black licorice. Very inclusive!!
I used a chocolate cake mix, and homemade vanilla buttercream icing, because that’s what my family likes best. It was not too difficult to decorate and everyone loved it, grandkids especially.

Had fun and made a fun bunny cake. If you have red licorice then I recommend you using a food coloring marker. If you would like use coconut and add green coloring for grass. Be creative and have fun! Hope you like it!
I used white instead of yellow and cream cheese frosting because we love that best. so much fun and super tasty!
I followed the cut out idea and made it out of two cakes from scratch : an apple cake covered with apricot marmalade to stick to the shredded coconut for the face and a blueberry lemon cake covered with lemon icing and shredded coconut dyed pink for the inside of the ears and regular coconut for the rest of the bunny ears. I used blue dyed shredded coconut for the bowtie.On addition I used red licorice for the mouth and whiskers and jelly beans for the eyes and nose. It came out so adorably wonderful!
Have made this bunny cake for years! So easy & fun to do. Sometimes the ears & bow tie get decorated differently. I use whatever is on hand.
