Easy Birthday Cake

For college students on a tight budget, try this quick, cheap, and cheesy tuna and noodles recipe. You can add thinly sliced almonds or sunflower seeds for added taste and texture if you really want to jazz it up. Naturally, this defeats the point of it being inexpensive and simple, but at least it’s more fun.

Ingredients

  1. 3 tablespoons water
  2. 3 tablespoons vegetable oil
  3. 2 teaspoons baking powder
  4. 3 cups cake flour
  5. 1 ¾ cups white sugar
  6. 1 ¼ cups water
  7. ½ cup shortening
  8. 2 ½ teaspoons baking powder
  9. 1 ½ teaspoons vanilla extract
  10. 1 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch cake pans.
  2. Combine 3 tablespoons water, vegetable oil, and 2 teaspoons baking powder in a small bowl to make an egg substitute. Whisk until well combined.
  3. Combine cake flour, sugar, 1 1/4 cups water, shortening, 2 1/2 teaspoons baking powder, vanilla extract, and salt in a large bowl. Add egg substitute and beat with an electric mixer until well mixed, about 4 minutes. Pour batter into the prepared cake pans.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely before topping with your choice of frosting.
