Family members love making this banana bread cake recipe. The use of overripe bananas is fantastic. Usually, I make two loaves by doubling the recipe. If you want, you can also include walnuts.

Ingredients

  1. 3 very ripe bananas
  2. 1 ½ cups all-purpose flour
  3. 1 cup white sugar
  4. ¼ cup butter, softened
  5. 1 large egg
  6. 1 teaspoon vanilla extract
  7. 1 teaspoon baking soda
  8. ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×5-inch loaf pan.
  2. Mash bananas in a large bowl. Add flour, sugar, butter, egg, vanilla, baking soda, and baking powder; mix until well combined. Pour into the prepared loaf pan.
  3. Bake in the preheated oven until a toothpick inserted into the center of loaf comes out clean, 50 to 60 minutes.
  4. Place overripe bananas in the freezer until you are ready to use them.

Doubled the recipe and made two. I added chopped walnuts and raisins and half cup of sour cream. I used one and 1/2 cup of Splenda, as my husband is diabetic. It’s excellent. I will definitely make this again.

The easiest recipe for the yummiest banana loaf cake! Mine took 40 minutes to bake at 220 C. ( i use a combi oven) The cake turned out super moist and the entire process including prep took only 55 minutes. I am definitely making it again! Thank you, Sandi for this wonderful recipe.

This turned out really tasty, soft and easy! I did add chocolate chips and instead of white sugar I used the same amount of brown sugar. It turned out great! Mine was also perfectly done in 45 minutes, but each oven differs, so it could be that mine runs a bit hot.

Easy, moist and extremely tasty recipe. I did use 1/2 cup sugar and 1/2 cup brown sugar. I also covered with foil last 15 minutes of baking.

I added some cranberries, chopped walnuts, ground cinnamon, and instead of vanilla extract, I used almond extract. My husband loves it!
