Ingredients
- 1 ¼ cups white sugar
- ½ cup butter
- 2 large eggs, beaten
- 1 teaspoon baking soda
- ¼ cup sour cream
- 1 cup mashed bananas
- 1 ½ cups cake flour
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- Cream butter and sugar together in a large bowl with an electric mixer until light and fluffy. Add eggs and beat well. Dissolve soda in sour cream and add it to butter mixture; beat well. Mix in mashed bananas; add cake flour and mix until just incorporated. Stir in vanilla extract. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.
- You can use all-purpose flour instead of cake flour in a pinch. If you prefer a less sweet cake, try reducing the sugar to 1 cup.

I fell in love with this cake even though I hate banana cake! I make it with less sugar as recommended at the end. Sometimes I make it with olive oil, when I don’t have butter, so I beat the eggs first and add the oil a little at a time. Thanks for the great recipe
The recipe says to mix well throughout the recipe. I believe it should be changed to just until combined for the flour. I have make this cake two times and both times it came out dense and anything but like a cake texture.

This was very easy & had a nice flavor–but not enough banana flavor for me. I liked the fact that it made a 9×9″ pan so it was a better size for just two of us!
Too sweet and missing salt in the ingredients- I added 1/2 teaspoon kosher salt and could have done a bit more
Very good – excellent use of overripe bananas. I used 2 overripe bananas (that was what I had, so I didn’t measure or anything), I did not have sour cream on hand so I used plain yoghurt, I also go light on the sugar. It was very tasty — a nice change from banana bread (which is my other go-to for overripe bananas). I will make again.
I loved this recipe. The directions were easy to follow and the ake came out moist and very tasty. I added some cream cheese frosting I had from another cake I had baked and was frosting. It wasa very nice addition.
Sooo much better than banana bread, I think. Light and fluffy. Watch baking time – mine got a tad too dark with the recommended time. My fault; I should have kept a closer eye on it!

I love this banana cake. No more worries about food waste when I see some bananas going brown on the kitchen counter.I have made many times using avocado oil for the butter, AP flour and just 3/4 cup of sugar( the bananas add sweetness to the cake too). My cake is always done in 30 minutes. It’s really good with a cup of coffee in the morning or with my afternoon tea.
Easy and moist.I added some walnuts .Next time I will add more banana and a little more sugar though.The flavor wasn’t quite there for me.Overall it was good

This was exactly what I was looking for. Like another reviewer, I used more bananas than called for (because I needed to get rid of them). I also subbed the same amount – coconut sugar in lieu of white sugar – and it was not too sweet at all – very mildly sweet. The consistency was very moist and delicate. I added some crushed walnuts and cinnamon too, and used a bundt pan. It took about 35 minutes instead of 45. My household enjoyed this – it’s fluffier and softer than a banana bread and was awesome with vanilla bean ice cream.
I did it …and after I placed it in the oven I realised that I forgotten to add the butter milk…though came perfect. Everyone loved it. No harm done..

I have searched for a good banana cake recipe for awhile now, and this one is A1! I did add a cream cheese frosting with walnuts on top to it, otherwise, I made it as stated.
