Easter Bunny ‘Butt’ Cake

This is more of a set of basic instructions for making this adorable and humorous Easter Bunny “butt” cake than it is a recipe. Using smaller oven-proof dishes and micro cupcake tins, you may bake smaller cakes. You can use any cake mix flavor and any pink icing flavor. Decorate the grass with candy canes, chocolate chips, jelly beans, etc.

Ingredients

  1. 1 (15.25 ounce) package yellow cake mix (such as Duncan Hines®)
  2. 1 cup water
  3. ⅓ cup vegetable oil
  4. 3 eggs
  5. 1 pound flaked coconut, or more as needed, divided
  6. 3 drops red food coloring, or as needed
  7. 3 drops green food coloring, or as needed
  8. 2 marshmallows, halved lengthwise
  9. 1 (16 ounce) container ready-to-use pink frosting, or more as needed
  10. 3 tablespoons ready-to-use white frosting, or as needed
  11. 1 pink fruit rolls (such as General Mills® Fruit Roll-Ups)
  12. pink paper bunny ears

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 muffin cups. Grease and flour an oven-proof glass or ceramic bowl.
  2. Beat cake mix, water, vegetable oil, and eggs together in a bowl with an electric mixer on low speed until just-moistened. Increase mixer speed to medium and beat until batter is smooth, about 2 minutes. Fill prepared muffin cups with batter; pour remaining batter into prepared oven-proof bowl.
  3. Bake cupcakes in the preheated oven until golden and the tops spring back when lightly pressed, 18 to 21 minutes. Let cupcakes cool briefly in the muffin tin before transferring to a wire rack to cool completely.
  4. Bake cake in the preheated oven until golden and a skewer inserted into the center of the cake comes out clean, 33 to 45 minutes. Let cake rest in the bowl for 10 to 15 minutes before transferring to a wire rack to cool completely. Transfer cooled cake to a serving platter.
  5. Place 2/3 of the coconut into a resealable plastic bag; add red food coloring, seal the bag, and shake until coconut is shaded pink. Repeat process until coconut is your desired shade of pink.
  6. Measure out about 1/2 cup of remaining coconut and place in a bowl. Pour remaining coconut into another resealable plastic bag; add green food coloring, seal the bag, and shake until coconut is shaded green. Repeat process until coconut is your desired shade of green.
  7. Secure 2 cupcakes, tops against the cake, with toothpicks to one end of the cake to form bunny “feet.” Place 2 marshmallow halves, cut-side down, on top of each cupcake to complete each “foot.” Secure remaining cupcake, top-side against the cake, with a toothpick to the top of the cake to create the “tail.”
  8. Spread pink frosting over cake and “feet”, excluding the “tail.” Cover pink frosting with pink coconut. Spread white frosting over the “tail” and cover with reserved white coconut.
  9. Cut fruit roll to form 2 small ovals and 6 smaller circles. Using frosting as “glue,” secure 1 oval and 3 circles to each “foot” to resemble foot pads. Secure paper bunny ears to the serving plate at the front of the bunny cake using frosting. Sprinkle green coconut around the cake to resemble grass.

Too cute!!!! I’m glad there was a video but even with it I still don’t understand why the recipe says 2 marshmallows cut in half lengthwise. I ended up using one bisected in half. Like other reviewers I found the whole fruit roll-up a pain! Where I did find them it was buy in bulk or bust. Lol I ended up with a version of them and worked around some kind of tongue tattoos printed on them and they were red not pink. I wish I would have seen the lady’s review that said she used laffy taffy* she stretched out and made her cuts. I so will be doing that next time! I didn’t have the snazzy popsicle sticks for the ears but being crafty and always making do with what’s on hand I cut a disposable drinking straw in half and taped it to the ears I made. I found the pleasant surprise that the straw’s hollowed out center was nice and sturdy in the cake and made positioning a cinch! I also did what other reviewers suggested and used Easter basket grass around the cake (just didn’t feel like messing with coconut and food coloring lol) and I for the life of me couldn’t find pastel almond m&m’s* so I used some pastel jelly birds eggs. THANKS SO MUCH FOR THE SUPER CUTE (off the cuff and funny conversation piece) RECIPE!!! Much appreciated and the added bonus was no specialized mold! Happy Easter 2021!

We used whipped frosting instead of the ready-to-use type. Also, we only needed about a little more than half of the coconut flakes that was called for. Couldn’t see how more could have been added. We brought the cake to an Easter party and it put a smile on the face of everyone who saw it.

My son and I made this for easter. It turned out really good. Easy to assemble and decorate. We flavored with double strength vanilla and made a fluffy vanilla cream cheese frosting! Its my sons favorite flavor! I recommended this recipe! 🙂

ADORABLE! The next time I make this cake it will be so easy because I won’t have to figure out what I want to do. I used a 2 quart pyrex measuring cup to bake the cake. For ears, I purchased a bunny headband. The bunny headband was white so I saw no need to make a pink bunny. When the marshmallow is cut, it is 2 half circles. I couldn’t find fruit roll-ups so I stretched a strawberry “Laffy Taffy” and cut the shapes I needed for the foot pads. I used Easter grass around the bunny. (NOT the cellophane type as it would have too much static). This was a fun recipe to make. Thanks barb1031c for sharing such an ADORABLE recipe!
