For any leftover turkey, try this dish. Everyone will eat this, even those who claim they don’t like turkey. Prepared in advance and frozen, it can be heated for 1 1/2 hours in a covered dish at 350 degrees Fahrenheit (175 degrees Celsius).

Ingredients

  1. ⅓ cup small pearl tapioca
  2. 2 tablespoons chia seeds
  3. 1 ½ cups water
  4. 4 cups coconut milk
  5. 1 cup palm sugar
  6. ½ cup cocoa powder
  7. 3 tablespoons arrowroot powder
  8. ½ teaspoon salt
  9. 1 teaspoon vanilla extract

Instructions

  1. Combine tapioca and chia seeds in a pot and cover with water; let soak until thickened and gelatinous, at least 1 hour.
  2. Mix coconut milk, palm sugar, cocoa powder, arrowroot powder, and salt into tapioca mixture; cook and stir over medium heat until desired thickness is reached, 10 to 15 minutes. Remove saucepan from heat and stir vanilla into the pudding.
  3. Any type of sugar can be used in place of the palm sugar.
  4. I used 1 can of full fat coconut milk, then add enough water to make 4 cups.
