This charming layered coffee cake is a simple to create sweet and fruity treat.

Ingredients

  1. 3 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 2 cups white sugar
  4. 1 cup vegetable oil
  5. 4 eggs
  6. ½ cup orange juice
  7. 4 apples – peeled, cored and sliced
  8. 5 tablespoons white sugar
  9. 5 tablespoons brown sugar
  10. 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 inch tube pan.
  2. In a large bowl, stir together flour and baking powder. In a separate bowl, beat together 2 cups sugar, vegetable oil, eggs. Stir egg mixture into flour mixture, alternately with orange juice, until smooth. In a small bowl, combine 5 tablespoons white sugar, 5 tablespoons brown sugar and 2 teaspoons cinnamon.
  3. Pour 1/2 of batter into prepared pan. Add 1/2 of the apples then 1/2 of the cinnamon sugar mixture. Repeat laying with remaining ingredients.
  4. Bake in preheated oven until a toothpick inserted into center of cake comes out clean, about 50 to 70 minutes. Let cool for 15 to 20 minutes, invert on a plate and serve.

It was an interesting concept to have a plain cake with layered apple + sugar. However, putting the apples on top made them not cook correctly. Also, the sugar/cinnamon mixture was purely sugar and thus stuck to the sides of the pan and came out over crunchy by the time the cake had cooked. It was strange to have the difference in textures from the sugar mixture in the middle and that on top. My cake turned out crumbly and stuck to the pan even though I buttered it, but even so it’s overall not a cake I’ll probably try out again.

It didn’t make much, so next time I will double the recipe or make 2 pans. But otherwise so good, a little too mushy in the middle, but I’ll leave it to cook a tad longer next time.

I used thawed previously frozen apples- otherwise followed the recipe exact. Served it warmed up the next day- consistency similar to bread pudding. With vanilla ice cream- amazing. My guests loved it.

Super tasty, and moist! I made it with half of gluten free all-purpose flour from Trader Joe’s, the other half brown rice flour, for my husband needs a gluten free diet. Unfortunately, I needed something else to help it hold together, because it fell apart too easily. My fault, not the recipe. I will have to further modify it for gluten free.
