Ingredients
- 2 tablespoons vegetable oil
- ½ cup unpopped popcorn
- 2 cups dark brown sugar
- 1 cup butter
- ½ cup white corn syrup
- 1 teaspoon salt
- ½ teaspoon vanilla extract
- ½ teaspoon baking soda
Instructions
- Preheat oven to 250 degrees F (120 degrees C).
- Heat oil in a large saucepan over medium-high heat. Put 4 popcorn kernels into the oil and cover until popped; add remaining kernels to the saucepan in an even layer. Cover and remove from heat, about 30 seconds. Return to heat and gently shake pan back and forth over the burner until popping slows to several seconds between pops, 1 to 2 minutes. Remove from heat and transfer to a large bowl.
- Combine brown sugar, butter, corn syrup, and salt in a 2-quart saucepan. Bring to a boil, stirring constantly. Let boil for 5 minutes more without stirring. Remove from heat and stir in vanilla extract and baking soda. Stir well. Pour over the popcorn; mix until evenly coated. Transfer to a shallow oven-safe pan.
- Bake in the preheated oven, stirring every 15 minutes, until a cooled piece of popcorn is crunchy, about 1 hour.
- Your popped corn should measure about 6 quarts.

This turned out wonderful. I used store bought, pre-popped popcorn that I got on sale. I used 8 quarts of it and put it in my roaster. I followed the recipe exactly (accept for a little extra vanilla). I wanted to add peanuts so I added them during my first stir out of the oven. They didn’t stick well, so next time I’m going to sprinkle them on top before I pour on the caramel. A huge batch of awesome “Crunch and Munch” for about $3. Can’t beat it!!
Easy to do, requires a little work but so worth it for the fantastic results. Delicious! I was a little short on the brown sugar so I added about 1/3 cup of granulated sugar and the results were still amazing
This recipe is saved to my favorites; I never want to lose it! I use my air popper and I pop 2/3 C popcorn instead of the 1/2 C that the recipe calls for. That amount works perfect for the ratio of caramel to popcorn. Excellent and highly addictive!
We use AIR Po[ed corn no oil and 1t of Mexican Vanilla and makes this Carmel Corn outstanding! Takes about an hour and pretty darn easy for this great taste.

I’ve made this a few times in the past couple of months and it’s excellent every time. I can’t see where you could go wrong! I add salted peanuts but otherwise stick to recipe. I find it similar to “Crunch & Munch”. Very addictive!!!!!
