An ideal method for smoking salmon without wet brining. We have experimented with smoked salmon recipes for years, and this quick dry-brine method is simple and delectable. When there is a party, this is our family’s go-to appetizer. Serve it with cream cheese and plain bagels as an alternative.

Ingredients
- 2 cups all-purpose flour
- 1 cup chopped walnuts
- 3 tablespoons ice water
- ½ teaspoon salt
- ¾ cup butter
- 1 teaspoon vanilla extract
- 3 tablespoons white sugar
- 2 cups confectioners’ sugar
Instructions
- If using butter it must be cold. Mix butter with flour until it resembles fine crumbs. Add white sugar, nuts, and salt. Mix well, adding ice water till you make stiff dough.
- Add vanilla extract and knead lightly. Roll out on floured board 1/4 inch thick.
- Cut into crescent shapes using a whiskey glass coated with flour.
- Bake at 350 degrees F (180 degrees C) until bottoms are lightly browned. While hot, roll in confectioner’s sugar, (I usually use a brown bag or baggie bag to roll the cookies in with the powdered sugar).

My Nana made these every year and entire family loves them!!! She gave me the recipe a few years ago and now I make them too. All of my friends and coworkers ask me to make these during the holidays. I cannot tell you how yummy these are.. you NEED to make them! One thing I have changed is to just make them into balls because shaping them into crescents is a huge pain in the… and it takes WAY too long.
I let them rise much longer, so they would be big. Delicious!
I accidentally used regular white sugar instead of confectioners, but they turned out well. They had a texture very similar to pecan sandies. I took them to the in-laws for Christmas, and it reminded them of a recipe from their childhood. Great, inexpensive recipe.
