Cranberry Arctic Freeze Pie

My grandmother creates an arctic freeze dessert every Christmas. I believed it would be fantastic if made into a pie.

Prep Time: 10 mins
Additional Time: 2 hrs
Total Time: 2 hrs 10 mins
Servings: 8
Yield: 8 servings

Ingredients

  1. ½ (8 ounce) package cream cheese, softened
  2. 1 tablespoon white sugar
  3. 1 tablespoon mayonnaise
  4. ½ (20 ounce) can crushed pineapple
  5. ½ (14 ounce) can whole berry cranberry sauce
  6. 2 tablespoons chopped pecans
  7. ½ (8 ounce) container frozen whipped topping (such as Cool Whip®)
  8. ½ cup miniature marshmallows
  9. 1 (9 inch) prepared graham cracker crust

Instructions

  1. Blend cream cheese, sugar, and mayonnaise together in a bowl. Add pineapple, cranberry sauce, and pecans; mix to combine. Fold in frozen whipped topping and mini marshmallows.
  2. Pour mixture into graham cracker pie crust. Freeze until firm, about 2 hours.
  3. You can use mini graham cracker pie crusts instead of a large crust. If you are using mini crusts, they will take about 45 minutes to freeze.
  4. The pie is easier to serve when cut from a semi-frozen state.
