Cranberry-Almond-Apricot Bark

I had to get the recipe after a friend prepared me a bag of this delicacy for Christmas. A lovely festive treat with the ideal balance of cranberries, almonds, and apricots. Place in the fridge to store.

Ingredients

  1. 12 (1 ounce) squares semisweet chocolate, chopped
  2. ½ cup chopped dried cranberries
  3. ½ cup slivered almonds
  4. ½ cup chopped dried apricots

Instructions

  1. Line a baking sheet with a sheet of waxed paper.
  2. Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  3. Combine cranberries, almonds, and apricots in a bowl. Add to melted chocolate and mix until well combined.
  4. Spread chocolate onto the prepared baking sheet to a thickness of about 1/4 inch. Place baking sheet in the refrigerator until chocolate has completely hardened, about 1 hour. Break into pieces.

Very simple to make. I melted my chocolate in the microwave. I did top it with some of the mix at the end for color.
