Ingredients
- cooking spray
- 8 fresh peaches – peeled, pitted, and sliced
- ½ cup butter, cut into pieces
- ½ cup brown sugar
- 2 cups all-purpose flour
- 2 cups white sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 2 eggs, lightly beaten
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking pan with cooking spray.
- Arrange peaches in the prepared pan. Scatter butter over peaches, then sprinkle brown sugar evenly over top.
- Mix flour, white sugar, baking powder, and salt together in a bowl. Stir oil and beaten egg together in another bowl; add to dry ingredients and stir to combine. Spoon mixture over peaches, then sprinkle cinnamon over top.
- Bake in the preheated oven until crust is lightly browned, about 45 minutes.
- For a lighter version of this cobbler, the butter can be reduced to 1/4 cup and the oil can be reduced to 3/4 cup. In talking with my mother-in-law (who gave me the recipe), she says she doesn’t use the full amount of butter or oil and it is just as good.

This has a wonderful flavor but like a few others there is too much oil and butter. Wish I would have read the reviews first. I will make it again because it tastes great but will cut the oil and butter in half!
I made the (slightly) lighter version. It was amazing! I’m going to bring it a family dinner but I’m going to attempt to halve the recipe. If I make the whole thing, we will eat it all as fast as we can. This is a recipe I will make again and again.

Such a delicious cobbler! Tried out this recipe to use up some peaches and ended up making it 4 times in one week! And then I tried it again with apples because my family was still requesting it and we were out of peaches. It was just as amazing with apples! Yum! Best cobbler ever!

Super yummy! I made as is without eggs since hubby is allergic. Only put 1.5 cups sugar and 3/4 cup of vegetable oil and still turned out great! Only reason for 4 stars is bc I think needs more peaches. Next time I will put at least 10-12 but I like less cobbler more peaches.
I really loved this recipe, only reason I went with the 4 stars was due to it being too much butter. Next time I will cut back on the butter in the topping a bit, like others did. Flavor is great, recipe is so easy. I tend to be lazy so I chose not to peel my fresh peaches. I just cut them up and tossed them in the baking dish, no pit of course.. It made no difference so if you prefer not to peel them you will still get a great dessert. My fresh peaches were a bit mealy and not very flavorful but they were all I had so I used them anyway. Turns out that didn’t matter because cooking them brought out the sweetness. I recommend this recipe, maybe use 1/3 c of butter instead of 1/2.

Very good. I didn’t sprinkle the brown sugar over the peaches so it wasn’t overly sweet.
I made this for the first time and it was very easy, & I am one not to change the recipe the very first time I have tired it. I’m not really sure if I would change anything and it was a total hit. The cookie crust is really good. Thank You Cindy Ann
This is amazing! However, it is best served fresh. The cookie sogs as leftovers.
One word EXCELLENT!!! perfect my husband loves it!! i did use melted butter instead of oil and didnt use a full cup! also I through in some frozen blueberry’s this was such a simple and very very tasty recipe!! and tasted amazing with Whipped cream on top!!

This was the best cobbler ive ever had i have made it several times and its a big hit with my family my kids loved it. i did use the tip and cut down the ingredients goes great with frozen vanilla yogurt and butter peacan ice cream Yummy
