Cinnamon Roll Swirl Coffee Cake

This Korean bean sprout dish was inspired by one that my mother, who is now 76 years old, used to make. Try this spicy recipe if you enjoy the taste of hot, spicy chili. If not, try it without the chile powder. Both mung bean sprouts and soy bean sprouts can be prepared using these two separate recipes. It tastes great with hot, steaming rice.

Ingredients

  1. 3 cups all-purpose flour
  2. 1 cup white sugar
  3. 1 ½ cups milk
  4. 2 large eggs
  5. 4 teaspoons baking powder
  6. 2 teaspoons vanilla extract
  7. ¼ teaspoon salt
  8. ½ cup unsalted butter, melted and cooled
  9. 1 cup brown sugar
  10. 2 tablespoons all-purpose flour
  11. 2 tablespoons ground cinnamon
  12. 1 cup unsalted butter, cubed
  13. 2 cups powdered sugar
  14. 5 tablespoons milk
  15. 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan.
  2. Mix flour, sugar, milk, eggs, baking powder, vanilla, and salt for cake together in a large bowl until completely combined. Slowly pour in butter and mix to incorporate; pour into the prepared baking pan.
  3. Whisk brown sugar, flour, and cinnamon for topping together in a bowl. Cut in butter with 2 knives or a pastry blender until well combined. Drop evenly over the batter, then swirl with a knife.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes.
  5. Mix powdered sugar, milk, and vanilla for glaze together in a small bowl. Drizzle over the warm cake.

There is so much butter in the cinnamon swirl that it caused the cake to stay gooey and never baked properly.

I hate to say it but I was greatly disappointed. Way too much butter which made it heavy and came out looking freakish. Had to toss it.

Delicious, and really easy! Will be making it again. I might experiment with a cream cheese glaze next time. I think you could easily customize this to use your favorite cinnamon roll glaze.
