These brownies are sweetened with honey rather than sugar or chocolate and are flavored with carob powder and brewed tea.

Ingredients

  1. 6 cups all-purpose flour
  2. 4 teaspoons ground cinnamon
  3. 3 teaspoons baking powder
  4. 1 teaspoon salt
  5. 2 cups butter, softened
  6. 2 cups dark brown sugar
  7. 2 large eggs
  8. 6 teaspoons vanilla extract

Instructions

  1. Combine flour, cinnamon, baking powder, and salt in a bowl.
  2. Cream butter and sugar together using an electric mixture in a second bowl until fluffy. Add eggs 1 at a time and beat well after each addition. Mix in vanilla extract. Add flour mixture to butter mixture and mix everything by hand into a smooth dough.
  3. Divide dough into 4 pieces and flatten into 1-inch thick rounds. Cover with plastic wrap and chill for 1 hour.
  4. Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  5. On a lightly floured surface, roll dough to 1/4-inch thickness and cut out desired shapes with cookie cutters. Place cookies on the prepared baking sheets.
  6. Bake in the preheated oven until lightly browned, 8 to 10 minutes. Cool on wire racks and decorate as desired.

I used this recipe for my Christmas cookies since my husband isn’t a fan of regular sugar cookies. They came out okay, a little dry for my liking but at least they were cakey not crunchy. The cinnamon flavor came through nicely. They rolled out and cut well, and held their shape in the oven fabulously. They aren’t overly sweet which is good since I decorated with royal icing.

This was the first recipe I could actually cut out the cookies with cutters with no problems. I followed the recipe as written. I think next time I would add a glaze on top.
