Ingredients
- 1 cup white sugar
- ½ cup unsweetened cocoa powder
- ¼ cup vegetable oil
- 2 large eggs
- 3 teaspoons peppermint extract, or more to taste
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup semisweet chocolate chips
- ¼ cup confectioners’ sugar
Instructions
- Mix white sugar, cocoa, and vegetable oil together in a bowl. Beat in eggs and peppermint extract. Separately mix together flour, baking powder, and salt; combine with above ingredients. Mix in chocolate chips.
- Cover dough and place in a freezer for 1 hour (or refrigerate for 3 hours or longer.)
- Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- Take dough out of the freezer and remove by rounded tablespoons. Form into balls with clean hands. Roll each ball in confectioners’ sugar and place on prepared baking sheets.
- Bake in the preheated oven until a toothpick comes out mostly clean, about 20 minutes.

I added ground walnuts and a little more peppermint extract only because my family likes nuts in all their cookies. Great tasting and so easy to make. I can quickly mix the ingredients before work and bake while I am preparing dinner . No need to turn the oven on again I have dessert for dinner and cookies the next day for lunch I made the cookies smaller than the recipe.
These were great! I did think that it was a little too much peppermint for me so I’ll try it with less next time.
This yielded some very delicious crinkle cookies! The peppermint really adds a wonderful layer to the very chocolatey cookie. Will make these again!
