Chocolate Chip Cookies with Avocado

In order to make baking a little bit healthier, I read that you could substitute mashed avocado for all or part of the butter. I tried my dad’s favorite cookie recipe that I had pulled out. I used half less butter. I couldn’t tell they contained avocado, but they were still delicious.

Ingredients

  1. cooking spray
  2. 2 ¼ cups all-purpose flour
  3. 1 teaspoon baking soda
  4. ½ teaspoon salt
  5. ¾ cup white sugar
  6. ¾ cup brown sugar
  7. ½ cup unsalted butter, softened
  8. ½ cup mashed avocado
  9. 1 teaspoon vanilla extract
  10. 1 egg
  11. 10 ounces chocolate chips

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray baking sheets with cooking spray.
  2. Combine flour, baking soda, and salt in a bowl. Beat white sugar, brown sugar, butter, avocado, and vanilla extract together in a bowl using an electric mixer until creamy; beat in egg until smooth. Stir flour mixture, a few tablespoons at a time, into creamed mixture until dough is just mixed; stir in chocolate chips. Drop dough by the spoonful onto the baking sheets.
  3. Bake in the preheated oven until edges of cookies are lightly browned, 8 to 10 minutes. Cool cookies on baking sheet for 2 minutes before transferring to a wire rack to cool completely.

These cookies are very good. The only changes I made were to add a little cinnamon and to use half chocolate chips and half mint chips. I have been buying mashed avocado at Costco so I have been looking for lots of ways to use it. We really couldn’t taste it in the cookies.

Very good. I was looking for a way to use avocados hwich all got ripe at the same time and always love healthy alternatives. I used 3/4 cup avocado and 1/4 cup of butter. Also added 1 T cocoa and some cinnamon. Cooked for 10-11 minutes.

These were delicious and a score in my endless quest to sneak healthy things into my picky eater. My avocado was a little less ripe than ideal so I had to transfer the wet ingredients to my food processor to really purée the avocado and eliminate any sign of green chunks. I subbed oat flour for 1/2 c of the white and almond flour for 1/4 c, which upped the nutritional value without impacting texture of taste. I also reduced the brown sugar from 3/4 c to 1/2 c. The whole family likes these, I think they will become a staple for us! Thank you

I wasn’t sure about this recipe but was intrigued and I had two ripe, needing to be used, avocados. The taste was great. The only change I made was to use a brown sugar/ stevia mix to replace the white sugar and the brown sugar that was called for in the recipe. Very tasty, easy to make. Thanks for the recipe.

Omg these are sooooo good! I added cocoa powder and some spices and made them sugar free and gluten free. These cake out soo soft it was a hit in our home and my kids don’t even know there is avocado in it!

Followed the recipe exactly except for substituting 1 cup of whole wheat flour in place of part of the all purpose flour. These were great and we couldn’t stop eating them.

I had a larger avocado so I reduced the butter to 1/4 cup. I also used half whole wheat flour and half all purpose. I wanted my kids to eat these and I was afraid the color would turn them off since they know I add wheat flour to other baked goods so I added 1/2 cup cocoa powder. It worked they loved them.

IS THERE AVOCADO IN THESE?? Wow, Couldn’t even taste it! I used a gluten-free baking mix in place of the all-purpose so my mom could eat these. Fabulous, just stunning!
