Ingredients

  1. 3 tablespoons butter, melted
  2. 12 slices day-old bread, cut into 1-inch cubes
  3. ½ cup dark chocolate chips, or to taste (Optional)
  4. ¼ cup sliced almonds, or to taste (Optional)
  5. 8 eggs, beaten
  6. 3 cups milk
  7. 1 ½ cups white sugar
  8. 2 teaspoons ground cinnamon
  9. 2 teaspoons vanilla extract
  10. 2 teaspoons almond extract
  11. 1 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Pour melted butter over bread cubes in a 9×13-inch baking dish; toss to coat. Stir chocolate chips and almonds into bread mixture.
  3. Whisk eggs, milk, sugar, cinnamon, vanilla extract, almond extract, and nutmeg in a bowl; pour over bread mixture, lightly pressing bread with a spatula until egg mixture is absorbed.
  4. Bake in the preheated oven until the top of the bread pudding springs back when lightly pressed, about 45 minutes.

I’ve gotten a lot of great recipes from Allrecipes.com. This isn’t one of them. Made it according to recipe, no changes. I think it was the combination of the cinnamon and almond extract. Served it at my coffee gathering and even the 2 men who attend (and will eat just about anything) didn’t like it. I do a lot of baking for the gang & everyone was surprised because that’s the first time in 4 yrs I’ve made something that everyone didn’t like. So I will stick to my cranberry walnut bread pudding.

I have never made or had bread pudding in my life and I have to say that this was a huge success with my family. I left out the slivered almonds since not everyone in the house likes them.Will definitely make again since I always seem to have bread left over from this and that. Very yummy!
