Choc-illa Chip Cookies

Your family and friends will beg you for the recipe for these deliciously simple, inexpensive, and addicting eggplant fritters!

Yield: 3 1/2 – 4 dozen

Ingredients

  1. 1 cup margarine, softened
  2. ½ cup butter, softened
  3. 1 ½ cups packed brown sugar
  4. ¾ cup white sugar
  5. 3 eggs
  6. 1 ½ teaspoons salt
  7. 1 teaspoon baking soda
  8. 3 teaspoons vanilla extract
  9. 3 ½ cups all-purpose flour
  10. 2 cups semisweet chocolate chips
  11. 2 cups vanilla baking chips
  12. 1 ½ cups pecan halves

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Cream together margarine, butter and sugars until fluffy. Mix in eggs one at a time. Blend in vanilla, salt and baking soda. Add flour, semi-sweet chocolate chips, vanilla chips, and pecan halves and mix until all ingredients are moistened.
  3. Drop by spoonful (I use a large soup spoon to make a large cookie) onto ungreased cookie sheets and bake for 12-13 minutes.

It was so gross to much salt

Three stars but only if you reduce the salt to 1/2 tsp. as I did. Even at that these were plenty salty and I can’t imagine, for flavor OR health reasons, using a full 1-1/2 tsp. of salt. That said, while great tasting and buttery (if you use all butter as I did and NO margarine), this was not the type of chocolate chip cookie I like but I know it appeals to others. It’s just a matter of personal preference that I don’t care for a soft, moist chocolate chip cookie as this is. (The higher proportion of brown sugar is partly responsible for that) If you like the Original Nestle Toll House Cookie recipe this is a step above that both in appearance as well as flavor.

The only thing I didn’t like about these cookies is that they baked out soooo flat!!! Like pancake flat! Otherwise they were very yummy 🙂
