I reside in a building where peanuts are not allowed, yet there are moments when I just need a peanut butter cookie. One day, as I was trying to think of a way to get this taste, I came up with them. They more than met my expectations, and I anticipate that going forward, I’ll crave these more frequently than peanut butter cookies. The hordes of cookie vultures will gather around your cooling racks; I know I had a few. Completely peanut-free and sure to satisfy!

Ingredients

  1. 1 cup shortening
  2. 1 cup crunchy sunflower seed butter (such as SunButter®)
  3. ¾ cup white sugar
  4. ¾ cup brown sugar
  5. 2 eggs
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. ½ teaspoon ground ginger
  9. 1 pinch salt
  10. ½ cup candied ginger, finely chopped
  11. ½ cup dark chocolate chunks
  12. ⅓ cup raw sunflower seeds

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Combine shortening, sunflower seed butter, white sugar, and brown sugar in a large bowl; beat with an electric mixer until light and airy. Add eggs one at a time and continue beating on medium speed until very light.
  3. Sift flour, baking soda, ground ginger, and salt into a separate bowl. Mix well. Stir in candied ginger, chocolate, and sunflower seeds.
  4. Gradually add flour mixture to the creamed shortening mixture, stirring gently until combined. Do not overmix. Drop teaspoonfuls of dough onto ungreased cookie sheets.
  5. Bake in the preheated oven until cookies appear set, 8 to 10 minutes. Do not wait for the edges to brown. Cool on the cookie sheets for 2 to 5 minutes. Transfer to wire racks to cool completely.
  6. The cookies will not seem done when you take them out. Do not worry about this. They will firm up while cooling on the pan. If you bake them too long, they will not be chewy.

The flavor of these cookies were pretty good, but, my family were not huge fans of the candied ginger and chocolate combination. The cookies were also a little crumbly like the dry to wet ratio was off.
