Even though I don’t often make pancakes, I like kefir chocolate chip pancakes the best. I adore regular pancakes, but the addition of kefir gives them a deeper, more satisfying richness. I also strongly advise trying with different flavors of kefir when preparing these pancakes, such strawberry or pomegranate. Although I don’t consider pancakes to be particularly healthy in general, this recipe only asks for 2 teaspoons of sugar. It’s not even necessary to use maple syrup if you add chocolate chips. Enjoy these with some coffee or orange juice.

Ingredients
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 cup packed brown sugar
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup butter
- 2 eggs
- 1 cup packed brown sugar
- ½ teaspoon almond extract
- 1 tablespoon all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup flaked coconut
- 1 cup maraschino cherries, drained and juice reserved
- ½ cup chopped pecans
- 6 tablespoons butter, softened
- 4 cups confectioners’ sugar
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together 1 cup flour, oats, 1 cup brown sugar, baking soda and 1/4 teaspoon salt. Rub in the 1/2 cup of butter until crumbly. Press into the bottom of a 9×13 inch baking pan.
- Bake for 10 minutes in the preheated oven. Remove and cool. Make the filling while the crust is baking. In a medium bowl, beat eggs, almond extract, 1 cup of brown sugar, 1 tablespoon of flour, baking powder and 1/2 teaspoon of salt until smooth. Stir in the coconut, cherries and pecans. Spread over the pre-baked crust.
- Bake for 25 minutes in the preheated oven, until light brown. Let cool before icing.
- To make the icing, mix together the remaining 6 tablespoons butter, confectioners’ sugar and vanilla until smooth. Gradually add the reserved cherry juice until the desired consistency is reached. Drizzle over cooled bars before cutting into squares.

I will definitely make this again. Our guests loved it. I halved the ingredients for the drizzle and it was still too much. Maybe next time I won’t even bother with the drizzle.
I just searched this recipe for fun on allrecipes as it is a family tradition for my husband’s family. They’ve been a Christmas tradition for as long as he can remember (as a boy and he’s over 50 now lol). They are loved by all, the trick it to cut them very very small so that the sweetness is not overpowering. The joke in this family is that they were often made and frozen to have for Christmas, but the boys would get into the freezer and none would be left by Christmas. Today they still eat them frozen half the time… give it a try! Glad to see this recipe on here!
I used unsweetened coconut and walnuts instead of pecans. This was WAY too sweet for me, but I’m giving it a 4 instead of a 3 because the husband and kids loved it.

Very good, all the flavors come through. I chopped the cherries into small pieces with a food processor before putting them in, which helped to distribute them better.
Two recommendations – cut the cherries into quarters for better distribution throughout the mix, and reduce the amount of frosting. I think I made my frosting with 3 cups of powdered sugar and there was still too much! I’d make just enough to put a pink drizzle over the top of the bars rather than coating the entire surface.
These bars are so good, there are no words to describe them, all I can say is that I could eat the whole pan in one sitting!
I made these for Christmas, and they were an instant hit. Several people asked for the recipe as a must have at their own celebrations.
They were easy enouph to prepare, but I found with the addition of all that icing they were too sweet. Will either cut the icing by half or may try a cream cheese icing next time.
Absolutely fabulous..I used almonds instead of pecans and wow. They didn’t last long at all.
