One dish recipe that is simple to prepare. I’ve combined several award-winning recipes that I’ve collected online. To make it your own, feel free to add a few minor substitutions here and there.

Ingredients

  1. 16 vanilla wafer cookies
  2. 2 (8 ounce) packages cream cheese, softened
  3. ¾ cup white sugar
  4. 2 eggs
  5. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line muffin pans with cupcake papers.
  2. Place one wafer cookie in the bottom of each cupcake paper. In a medium bowl, cream together cream cheese and sugar. Beat in eggs and vanilla until smooth. Pour over wafers in cupcake papers.
  3. Bake in preheated oven 15 minutes, until golden and set.

I just made them but had to alter the cream cheese with chocolate frosting! I also added a little all purpose flour! So far they are rising up and looking nice! They turned out great I highly recommend this!! I also used parchment paper in my muffin tin!!

Baked 24 with the amount the recipe called for. Had to bake for nearly 30 minutes. Baked several with chocolate chips and swirled strawberry pie mix into some also (to use took a little longer to set. Did this all with my 9 year old son who loved adding the different flavorings.

I followed the recipe and it turned out well. I crushed butter cookies in the bottom of the muffin tins which was excellent. I filled them 3/4 full and it took about 35-40 to get golden. They looked great taking them out of the oven, but then collapsed while chilling the fridge. That made them a little too short & dense, but tasty with strawberry pie filling and cool whip dabbed on top.

I did not have the wafers, but went with the “cookie on the bottom”idea. Lemon Oreos (separated into their halves) were awesome. I did take suggestions of others for the sour cream and added sugar, but I think next time I’ll skip the extra sugar. There will be many next times for this recipe!

I have used this recipe for about 25 years and its perfect, as a New York style. Add the 3/4 cup sour cream and 1/4 cup sugar makes it a creamer cheesecake. Both are great and quick.

Sometimes you just need a base to start, then you modify to your likes. I read other reviews so added the cup of sour cream, instead of sugar I used splenda and to make it tart, because I love key lime pie, added the juice of 5 key limes at the end. I put the ingredients in my food processor. (make sure you add the key lime juice at the end) 5 stars for a great inspiration for the non regular bakers.

I made a Graham cracker crust rather than the vanilla wafer crust only because that’s what I had. Other than that, I followed the recipe. They were just okay.
