Ingredients

  1. cooking spray
  2. 1 (15.25 ounce) package yellow cake mix (such as Duncan Hines®)
  3. 1 cup cherry-flavored soft drink (such as Cheerwine®)
  4. 3 large eggs
  5. ⅓ cup vegetable oil
  6. 1 teaspoon almond extract
  7. ⅓ cup cherry-flavored soft drink (such as Cheerwine®)
  8. ½ cup unsalted butter
  9. ¼ cup cocoa powder
  10. 2 ½ cups powdered sugar
  11. ¼ teaspoon almond extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan with cooking spray.
  2. Combine cake mix, cherry soft drink, eggs, oil, and almond extract in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared cake pan.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 23 to 28minutes. Remove from the oven and let cool completely, at least 30 minutes.
  4. Combine cherry soft drink, butter, and cocoa powder in a saucepan over medium heat and bring to a boil. Stir and remove from heat.
  5. Place powdered sugar into a bowl and pour hot cherry mixture on top. Mix until smooth. Stir in almond extract and allow to cool frosting lightly. Spread over the cake.
  6. The directions for making the cake are based on the particular brand mentioned. Follow instructions on the box if using a different brand, substituting cherry soda for the water.

Having lived most of my life in NC and having a daughter that LOVES Cheerwine, I thought I needed to make this cake. I made it as written to include the Duncan Hines Yellow Cake Mix. Unfortunately my family did not love the cake. My husband and oldest said the cake reminded them of a cake you would have in an Army chow hall. It wasn’t bad but not their favorites. I may have spoiled them with my homemade cakes. I will continue looking for a Cheerwine cake they love.
