Ingredients

  1. 1 (9 inch) unbaked pie crust
  2. 36 individually wrapped caramels, unwrapped
  3. ¼ cup unsalted butter
  4. ¼ cup milk
  5. ¾ cup white sugar
  6. 3 large eggs
  7. ½ teaspoon vanilla extract
  8. ¼ teaspoon salt
  9. 1 cup pecan halves

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C.)
  2. Combine caramels, butter, and milk in a saucepan over low heat. Cook, stirring frequently, until caramels are melted and mixture is smooth, 10 to 15 minutes. Remove from the heat and set aside.
  3. Mix together sugar, eggs, vanilla, and salt in a large bowl. Gradually mix in the melted caramel mixture, then stir in pecans. Pour filling into unbaked pie crust.
  4. Bake in the preheated oven until pastry is golden brown, 45 to 50 minutes. Remove from the oven and let set on a wire rack until filling is firm, about 15 minutes. Serve warm or cold.

This was delicious. I made it as written but after doing so I would agree with those reviewers who said to reduce sugar to 1/2 cup. It was difficult to cut through the halved pecans so the next time I will try using chopped pecans. The halved pecans look beautiful though and I am not sure how the chopped ones will affect the look. It would be nice to see a picture of someone who used chopped pecans. I will definitely use this recipe again. I made my own crust Butter Flaky Pie Crust for allrecipe. I like the idea that there is no Karo Syrup in this recipe.

Using caramel instead of Karo syrup is brilliant. I’ve been making this recipe from this site for over 10 years, I get RAVING reviews every time. Now, any time I try a Karo Syrup pecan pie I am SO disappointed that it’s not the same taste! I follow the instructions to the T and every time it’s been amazingly delicious.

I think adding the caramels is a wonderful idea. When I make this I will omit the milk and white sugar, using a cup of Karo syrup. I have never made a pecan pie without Karo.

This is Lasca and Dub’s fav. If making pie crust or using my dishes, increase the filling. The original is about a quarter off. Try 12 servings next time and cook until it jiggles

I made this without changes. The flavor was outstanding. The best pecan pie I’ve ever tasted. I did decrease the sugar as others have suggested and it wasn’t to sweet. I gave it 4 stars because I didn’t like the texture of the filling. It was more like pumpkin pie. Next time I will try it with the ice-cream topping.

Thank you – This was a ridiculously easy recipe. I was able to make this the night before. I added an 1/8th tsp of orange extract to the filling and it was nicely flavored. It not only looks nice but tastes great too. Perfect for beginners at pie making.

I love pecan pie but the traditional corn syrup version is just too sweet. I found this recipe on all recipes many years ago and have been making it ever since. It’s absolutely DELICIOUS! The caramel is sweet enough but not so sweet that the pecans can’t be the star. I haven’t subbed out the candies for the ice cream topping caramel but based on other reviews it may be worth it if you’re short on time. I don’t mind so I melt a good caramel candy brand. try it…. you will LOVE IT!

I made this last night exactly how the recipe calls. It was absolutely amazing. A little dab of vanilla ice cream on the top was the only thing I added. A piece out of the fridge goes very well with a morning coffee, too. This is the first pie I’ve ever attempted and it couldn’t have been easier, other than being a little tedious unwrapping all the little caramel pieces.

Oh. My. Goodness! Followed this recipe to a tee. I’ve tried several pecan custard reciped that went straight from the oven to the compost. This pie is too pretty to cut although I did gently move a top pecan over and stole a spoon ful to taste. Delicious little pieces of pecan throughout, lovely melt in your mouth flavor. The mix is super loose going into the pie shell but don’t worry. It comes together beautifully after 40 minutes. Will jiggle when coming out of the oven.LET IT SIT. LET IT SIT A couple of hours at least until it thickens…yummy!
