Ingredients

  1. ½ cup unpopped popcorn
  2. 1 cup white sugar
  3. ½ cup light corn syrup
  4. ½ cup butter
  5. ¼ cup water
  6. ½ teaspoon vanilla extract

Instructions

  1. Pop popcorn in an air popper according to manufacturer’s instructions.
  2. Combine sugar, corn syrup, butter, and water in a heavy saucepan over medium heat; cook until toffee syrup temperature reaches 280 degrees F (138 degrees C) using a candy thermometer, about 10 minutes. Remove from heat and stir in vanilla extract.
  3. Mix toffee syrup with popcorn in a large bowl until evenly combined.
  4. I prefer Mexican vanilla extract, but traditional works well too.

This is a good recipe I tweaked it a little with one cup of white chocolate and a half a cup of English toffee candy.

10 min? It took almost 45 minutes to get to 280F and even then it never really quite achieved soft crack. After mixing it in to the popcorn I was left with one big huge gooey popcorn ball.

I love this recipe! Great job! I added a little red food coloring to make it Pink for Valentine’s Day and the texture of the butter toffee popcorn was just right… in fact I couldn’t stop ‘tasting’ it :-). Nice and crispy. Thanks for a great recipe!

We are popcorn lovers in our family, so I liked this popcorn. It is similar to a popcorn ball and it was eaten up in minutes. I was expecting a toffee taste, but I think brown sugar would need to be added. My grandson loved the popcorn because he didn’t have to bite into a big popcorn ball. I added the syrup to a large bowl to mix the syrup and quickly mixed the popcorn. Then, I poured the popcorn on a parchment lined baking pan and broke apart into chunks. I think next time, I would add some peanuts and maybe some food coloring to make the popcorn more festive.
