Without the effort of rolling out crusts, a delectable fruit pie!

Prep Time: 15 mins
Cook Time: 1 hr
Total Time: 1 hr 15 mins
Servings: 8
Yield: 1 9-inch pie

Ingredients

  1. 2 cups all-purpose flour
  2. 1 tablespoon white sugar
  3. ¾ cup butter
  4. 1 egg
  5. 5 ½ cups mixed frozen berries
  6. 1 ½ cups white sugar
  7. ¼ cup all-purpose flour

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Mix flour and sugar in a food processor. Cut in butter until mixture resembles coarse bread crumbs. Stir in egg until pastry is well blended.
  3. Press 1/2 the pastry mixture into the bottom and up the sides of a 9-inch pie pan, pushing firmly to make an even layer. Reserve remaining pastry mixture to sprinkle on top of filling.
  4. Mix berries, sugar, and flour in a bowl until well blended. Spoon filling into bottom crust. Sprinkle reserved pastry mixture on top of fruit.
  5. Bake in the preheated oven for 15 minutes. Reduce temperature to 350 degrees F (175 degrees C) and bake until top is golden brown, 45 to 50 minutes more.
  6. I used 2 apples (peeled and chopped), 1/4 cup frozen blueberries, 1/4 cup frozen raspberries, and the rest frozen, unsweetened strawberries. Any mix of fresh or frozen berries, fresh apples, and/or rhubarb is great in this.
  7. You may want to put the pie pan on a baking sheet in case the juices bubble over.

Very good and VERY easy! I used Blueberries, Blackberries and Red Raspberries. So yummy! And even better with a little vanilla ice cream. MMMMMM!

Made this for Valentines Day Dessert and it was a delicious choice. I wasn’t sure it would work with all frozen berries (which I always buy fresh then flash freeze) but it came together beautifully. The only thing I will change next time is to reduce the sugar by 1/2 cup since we found it a bit on the sweet side. This is so easy and quick to make you can throw it together if you’re in a pinch for a dessert. Thanks for sharing this great recipe!
