Ingredients

  1. cooking spray
  2. 1 (18.4 ounce) package brownie mix
  3. ¼ cup all-purpose flour
  4. 1 cup chocolate chips
  5. ¼ cup vegetable oil
  6. 2 large eggs
  7. 1 tablespoon multicolored candy sprinkles, or to taste
  8. 1 ½ cups powdered sugar
  9. ½ cup unsalted butter, softened
  10. ½ teaspoon vanilla extract
  11. ½ (16 ounce) tub marshmallow creme

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Lightly coat a wire rack with cooking spray.
  2. Stir brownie mix and flour together in a medium bowl until well combined. Add chocolate chips, oil, and eggs; stir until well blended.
  3. Scoop 20 rounded tablespoons onto the prepared baking sheets. Decorate 1/2 of the cookies with candy sprinkles.
  4. Bake in the preheated oven for 9 to 10 minutes. Remove from the oven and let stand for 2 to 3 minutes before removing to the sprayed rack to cool completely, about 30 minutes.
  5. Meanwhile, combine powdered sugar, butter, and vanilla in the bowl of a stand mixer fitted with the paddle attachment; blend until light and fluffy, about 4 minutes. Fold in marshmallow creme.
  6. Place marshmallow mixture in a large zip-top bag and cut a small hole in one corner. Pipe filling onto the center of one plain cookie and top with a sprinkled cookie. Repeat with remaining filling and cookies.

I added 1/4 cup more veggie oil. Came out moist & yummy! DO NOT overmix. Watch your measurements. So important.

When the dough was so thick that I had to use my hands to mix it, I should have known this wouldn’t be great. It was so thick that the outside is overly done and the center is still raw. Also, the math is a mess. Each half is only ONE tablespoon ? This is roughly a total of 58 ounces so I’m trying to figure out how this would only make 20 teeny tiny cookies? Searching for a better recipe.
