incredibly easy and wonderful dessert! a brittle that is identical to the mall’s candied pecans in flavor. Although the recipe only yields a small amount, it is definitely worthwhile. Mexican vanilla goes fantastically well with this.

Ingredients
- 2 tablespoons butter
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon, or more to taste
- 1 teaspoon vanilla extract
- 1 cup crushed pecans, or more to taste
Instructions
- Melt butter in a saucepan over medium heat. Cook and stir brown sugar in hot butter until dissolved. Add cinnamon and stir until fragrant, about 1 minute.
- Stir vanilla into brown sugar mixture; cook and stir until vanilla stops sizzling, about 30 seconds. Add pecans; cook and stir until pecans are fragrant and lightly toasted, about 1 minute. Pour pecan mixture out in a layer on parchment paper. Let cool to room temperature before breaking into pieces, about 20 minutes.

I’m not sure where I originally got this recipe but I’ve been using it for 30+ years. The only difference is that I butter the pan. I make around 10 lbs during the holidays and have been asked to make more. Easily doubles as I buy the 2 lb bag at Costco.
Tasty, but not a “brittle”. Its just candied nuts. Falls apart.
I made it twice – once with butter and the second time with coconut oil – both failed as brittle. Both bases balled up as soon as the pecans were added. What I got was two batches of sweet toasted pecans. Oh,well. Nice topping for salad, ice cream.
This isn’t really a brittle, it is really just candied pecans. There is not anywhere near enough of the sugar/butter mixture to make brittle with all those nuts. I would maybe try it with 1/2 as much pecans, or twice as much of everything else.
All I got was sugary lumps mixed with nuts.

This is SO easy and so delicious. I used Almonds and Walnuts, but any combination of nuts (or pretzels or rice crispies or coconut) would work. I had researched and read that you should not stir your sugar when you make brittle, but that IS NOT the case with this recipe. Because this recipe has butter, but no water, you can stir the sugar. In fact, if you don’t stir the sugar, it might burn. I know this, because I burnt my first batch – trying to be all fancy (actually, it was still pretty good). However, my second batch was fantastic. This would make a great gift. P.S. I used Wheylow Gold (a brown sugar substitute) so it was much lower in carbs.
