I created a fantastic brown rice salad dish. It is adored by all. Excellent as a side dish to bring to gatherings.

Total Time: 4 hrs 35 mins
Servings: 24
Yield: 24 chocolate chip cookies

Ingredients

  1. 6 tablespoons butter, at room temperature
  2. 1 cup all-purpose flour
  3. ¼ teaspoon baking soda
  4. ¼ teaspoon salt
  5. ½ cup brown sugar, packed
  6. ¼ cup white sugar
  7. 1 large egg, at room temperature
  8. ½ tablespoon vanilla extract
  9. 1 cup semisweet chocolate chips

Instructions

  1. Place butter in a microwave-safe bowl and cover with parchment paper; place a microwave-safe plate over the parchment paper to hold it down. Microwave butter for 5 minutes. Check butter; continue to microwave in 30-second intervals if needed, until butter is golden brown and has released a nutty aroma, an additional 30 to 90 seconds.
  2. Mix flour, baking soda, and salt in a large bowl and set aside.
  3. Beat brown butter, brown sugar, and sugar together in another bowl until smooth and creamy. Add egg and vanilla; mix until well blended. Add flour mixture and chocolate chips; mix until just incorporated. Place dough in a container, cover, and refrigerate for a minimum of 4 hours to 24 hours.
  4. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  5. Scoop cookies with a medium-sized cookie scoop and set on the prepared baking sheet, 2 inches apart.
  6. Bake in the preheated oven until lightly browned on the edges, 13 to 15 minutes. Cool briefly on the baking sheet, then transfer to a wire rack.

These cookies are amazing! The only substitution I made was adding vanilla extract because I did not have vanilla paste. They were still packed with flavor…. Yum!

5 minutes may be too long for the butter in the microwave- my microwave is only a 700 watt and it was almost too long. The cookies are great though and the brown butter really adds an almost caramel note to the flavor. Thanks for the recipe!
