Ingredients
- 4 large eggs
- 2 cups milk
- ¾ cup white sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons unsalted butter, melted
- 6 slices stale bread
- ½ cup chocolate chips
- 1 tablespoon chia seeds
- ¼ cup brown sugar, or as needed
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 12-cup muffin tin or line with paper liners.
- Whisk eggs in a large bowl just until mixed. Add milk, white sugar, cinnamon, and salt; mix well. Mix in melted butter.
- Break bread into small pieces into the bowl and mix until well combined and bread is wet. Add chocolate chips and chia seeds; mix well.
- Divide mixture evenly between the prepared muffin cups and sprinkle with brown sugar.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.
- Can use any type of stale bread such as bread ends, hot dog buns, etc.
- You can substitute the chocolate chips and chia seeds with many other ingredients such as blueberries, cacao, almonds, marshmallows, raisins, coconut, hemp hearts, cut-up bananas, etc.
- Allow more baking time if your bread wasn’t very stale and the mixture is more wet.

1.6.21 They come out of the oven all beautifully puffed up but very quickly deflate like a souffle. Perhaps not so pretty, but that’s OK, because they’re delicious! Baked an extra five minutes, and the texture was moist, tender, almost a bit creamy, and oh-so-easy to make. I could see adding a bit of vanilla and using mini chocolate chips rather than the regular size, but there’s nothing else that I would change. Was hoping with the word “muffins” in the title that they might be something that you could pick up to eat, but they’re too soft to do that. One thing that I do like is the portion control you get baking these into muffins. Thanks for sharing, nice recipe.
