Ingredients

  1. 1 cup butter
  2. ½ cup shortening
  3. 1 ½ cups packed brown sugar
  4. 1 ½ cups white sugar
  5. 5 eggs
  6. 3 cups sifted all-purpose flour
  7. 1 teaspoon baking powder
  8. ½ teaspoon salt
  9. 1 cup milk
  10. 1 teaspoon vanilla extract
  11. 1 cup chopped black walnuts
  12. 1 (8 ounce) package cream cheese
  13. ¼ cup butter
  14. 4 cups sifted confectioners’ sugar
  15. 1 teaspoon vanilla extract
  16. ½ cup chopped black walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
  2. In a large bowl, cream 1 cup butter, shortening, brown sugar, and white sugar. Add eggs, one at a time, beating well after each addition. Sift together flour, baking powder, and salt, and add alternately with milk to the creamed mixture. Stir in 1 teaspoon vanilla and 1 cup black walnuts. Pour batter into prepared pan.
  3. Bake in the preheated oven for 80 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  4. In a mixing bowl, cream together cream cheese and 1/4 cup butter. Add confectioners’ sugar, beat well. Stir in 1 teaspoon vanilla. Frost cooled cake, and sprinkle with 1/2 cup nuts.

This black walnut cake was a hit for the holidays. It was very moist. If you love black walnut icecream you will love this cake!

This is a delicious cake and the taste of black walnut is not overwhelming! The cooking time is NOT off if you use a bundt pan – it cooked for 80-90 mins. I made this cake for my husband’s birthday in a fancy bundt pan, just sprinkled with confectioner’s sugar before serving, rather than frosting it, it got RAVE reviews.

This cake turned out wonderful, except the time for baking if very off. start checking at 30 minutes and its probally done. Don’t let it get too brown. its very moist and the flavor is wonderful

I made this cake for my daughter’s 12th birthday yesterday. I called it my I-cake since it’s the first recipe I’d made from the internet. It was a tremendous success. There is one error in the recipe, though. It states to bake for 90 minutes. I baked for 25 minutes and it was golden brown. Thanks Cali for sharing!! Debbie in NC
