Ingredients
- 2 cups baking mix (such as Bisquick®)
- ⅔ cup milk
- 1 large egg
- 2 tablespoons white sugar
- ¼ teaspoon ground cinnamon
- ⅔ cup baking mix (such as Bisquick®)
- ⅔ cup brown sugar
- 4 tablespoons unsalted butter, cut into pieces
- ½ teaspoon ground cinnamon
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-inch square baking dish.
- Make the cake: Mix baking mix, milk, egg, sugar, and cinnamon together in a bowl until well combined; spread into the bottom of the prepared baking dish.
- Make the topping: Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Sprinkle evenly over batter, then drag a butter knife across the top in a crisscross pattern.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.
- You can use water instead of milk if desired. This will also work in an 8-inch baking dish.

This is not the original Bisquick coffee cake recipe. The original recipe contains 2 tablespoons oil. This is why so many people are saying this recipe is dry.
Love this coffee cake. I add 1 c. Raisins to the batter. I top the batter with spoonfuls of applesauce. I use white sugar instead of brown and add 1/2 c. Chopped pecans to the topping. This is how my mom made it & my whole family uses this recipe.

Very plain and dry
I’ve used this recipe for years from the original recipe on the box, which says to bake at 350* not 400*. I suspect that’s why a poster said hers was dry. I also add a little sour cream or apple sauce to the recipe for extra moistness.
It was a bit dry. I think I will add 1/4 cup melted butter the next time.

this recipe was easy to follow and easy to make. I added some homemade raspberry jam then swirled it with a knife before adding the topping. Just to make it a little more special.

So so good! I used pancake mix because I didn’t have bisquik on hand – worked just the same. Had to double the butter on the topping because it was not very crumbly. Added blueberries to batter. This was soooo good! This will now be one of my go-to recipes for a quick back!
I should have baked at 350 or 375. 400 degrees for 22 minutes burnt the edges of the cake. I put the batter in a 9 inch round cake pan and a little spilled over. If I ever try this again, I will add more sugar to the batter and cook at a lower degree.

I did not put cinnamon in the cake batter and added blueberries instead. It was delicious!!! I will definitely making it again.

My mom used to make Bisquick coffee cake when I was a kid. I used to love it. This recipe was ok except for the cake being more dry than I remember. Anyone ever add any oil to make it more moist? Oh, I did add 2 teas of vanilla to this recipe.
I added a little hazelnut creamer to cake mix. After Frosted with hazelnut nutella mixed in whip cream.

I make this often. The recipe used to be on the bisquick box. I also learned to DOUBLE the topping mix! It’s so much better. Also be generous with the oil to make it moist.
