This is one of the most delicious loaves I’ve ever had, perfect for seed lovers.

Ingredients

  1. 4 cups all-purpose flour
  2. ¾ teaspoon baking soda
  3. ¾ teaspoon salt
  4. 2 cups white sugar
  5. 1 cup drained crushed pineapple
  6. 1 cup vegetable shortening (such as Butter Flavor Crisco®)
  7. 3 eggs, beaten
  8. 1 tablespoon lemon extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift flour, baking soda, and salt together in a bowl.
  3. Beat sugar, crushed pineapple, shortening, eggs, and lemon extract together in a bowl until thoroughly mixed. Add flour mixture to pineapple mixture; stir until just combined. Drop dough by teaspoonfuls 2 inches apart onto baking sheets.
  4. Bake in batches in the preheated oven until tops are lightly browned, 12 to 15 minutes per batch. Transfer to wire racks to cool.

I didn’t have any Crisco so I used coconut oil. And because I use fresh pineapple and crush it, the batter came out too thin. I added more flour to the second batch so that it would come out cookie batter consistency. Loved the taste.

Can’t taste the pineapple at all. Had to serve with pineapple ice cream and fresh pineapple. Won’t make again. Plus cookie was dense. Rather use real butter in my cookies.

made today, and have to say they didn’t turn out like the picture. ended up having to add almost another cup of flour, to keep them spreading all over my cooking sheet, plus next time cutting one egg, this is basically a easy sugar cookie recipe with pineapple and lemon extract so it’s needs to be thicken up because of the pineapple and the three eggs.

I loved this recipe. I like the cake like feel of the cookie. I didn’t have any lemon extract, so used 2 tablespoons of lemon rind instead. Awesome flavor. I am going to use pineapple chunks next time just to see how that changes the cookie.

These don’t have enough pineapple in them for my taste. I found them to be pretty bland.

Pineapple should not be drained. Doesn’t have much pineapple taste. Husband didn’t like them. I doubled the batch in the first place and after his complaint, I added a whole can of crushed undrained pineapple and a cup more of flour. Perfect.
