Best Ever Chocolate Sponge Cake

I messed up a brownie recipe and came up with this one. Even though the brownies were terrible, the outcome was a flawless chocolate sponge cake. Since then, I’ve been making it, and it’s excellent for a layer cake, icing, or just by itself.

Ingredients

  1. 1 cup butter, melted
  2. 1 cup white sugar
  3. ½ cup brown sugar
  4. 1 tablespoon vanilla extract
  5. 4 eggs
  6. ¾ cup all-purpose flour
  7. ½ cup unsweetened cocoa powder
  8. 1 teaspoon salt
  9. ½ cup buttermilk, or as needed

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
  2. Stir butter, white sugar, and brown sugar together in a bowl; add vanilla extract and mix well. Stir eggs, 1 at a time, into butter mixture until smooth.
  3. Sift flour, cocoa powder, and salt together in a separate bowl. Stir flour mixture, alternating with buttermilk, into butter mixture until batter is smooth, adding more buttermilk if needed to thin out batter. Pour batter into the prepared baking dish.
  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

Taste was good but it was extremely dense, more like a brownie than a sponge cake.

2.16.19 The flavor is chocolate-y, fudg-y, and indulgent, but they really break down pretty well nutritionally. I scaled this recipe down to 12 servings, and since I wanted portion control, I baked in my mini bundt muffin pan for 18 minutes at 350º. Garnished with a dollop of chocolate whipped cream and Fragola Pazzo strawberries, a recipe from this site. They baked up beautifully, and they do have a bit of brownie flavor to them. dutchgirl, some times good things happen, even when you realize you’ve screwed up the recipe, and this is one of them.
