A simple banana cake that can be made in a mug and microwaved in one minute is the ideal quick treat.

Ingredients

  1. 3 tablespoons self-rising flour
  2. 2 tablespoons brown sugar
  3. 1 tablespoon white sugar
  4. 1 teaspoon vanilla sugar (Optional)
  5. 1 egg
  6. 1 tablespoon olive oil
  7. 1 tablespoon milk
  8. 1 ripe banana, mashed
  9. 3 crushed pecans, or more to taste (Optional)

Instructions

  1. Combine flour, brown sugar, white sugar, and vanilla sugar in a large microwave-safe mug. Add egg and mix well. Stir in oil, milk, mashed banana, and pecans. Mix well to incorporate all the flour.
  2. Microwave at high power until cake has risen and is cooked through, 2 1/2 to 3 minutes. Remove and allow to cool slightly before eating.
  3. If you cannot find vanilla sugar, add 1 or 2 drops of vanilla extract instead.
  4. If you prefer not to eat out of the mug, run a knife around the sides of the mug, and tip the still-warm cake onto a saucer.

Really strange texture, maybe do without the oil? I added some chocolate chips, it was fairly good. Would not make it again.

It doesn’t have a lot of flavor and the texture is not very appetizing. I did add chocolate chips to it which made it somewhat better.

I would have given 5 stars for taste, but gave 4 due to my small adjustments to the recipe. I always keep frozen bananas for smoothies, so decided to try this mug cake. I used only 1 Tbsp brown sugar, 1 packet Stevia sweetener, and regular vegetable oil instead of olive oil. It was moist & had good banana flavor; and was plenty sweet.. I would make it again.

Sorry, but I can not say that this was anything that I would make again. I have made other mug cakes before and some have been OK. Thought I’d use up a lonely banana on my counter and try this recipe. Glad I wasn’t hungry!
