Baked Waffle Pudding

This apple crumble, a favorite among the family, was originally my grandmother Hazel’s recipe, which my mother frequently prepared. She would prepare two at once to bring to potlucks or to friends who were ill or housebound. Nothing ever remains. yogurt made with French vanilla and serve warm.

Ingredients

  1. 8 frozen plain waffles (such as Eggo®), cut into bite-size pieces
  2. 1 ¾ cups milk
  3. 3 eggs
  4. ½ cup white sugar
  5. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch baking dish.
  2. Spread waffle pieces in the bottom of the baking dish.
  3. Beat milk, eggs, sugar, and vanilla extract together in a bowl until well-blended. Pour over waffles in the baking dish, making sure to cover them evenly. Let stand for 5 minutes.
  4. Bake in the preheated oven until center is set and edges start to brown and pull away from the sides, 20 to 25 minutes.

Tasted fine, but it took twice as long to bake and was still runny in the middle. Overall very mushy. I’m not sure what to do to fix this, unless maybe toasting the waffles first. My kids will eat anything so it was eaten, but I don’t know that I would make this again.

Took way longer to bake than the recipe called for.

The flavor of this is good, but the texture is just too mushy for me. I baked it for almost 40 minutes, and it was still mushy. I don’t mind wet, and slightly mushy regular bread pudding, but with waffles, it just wasn’t very appealing to me. I used chocolate chip waffles, which was fine.
