Ingredients

  1. 1 (20 ounce) can unsweetened pineapple chunks
  2. 3 tablespoons white sugar
  3. 6 tablespoons butter, melted
  4. 3 tablespoons all-purpose flour
  5. 5 ounces shredded Cheddar cheese
  6. 25 buttery round crackers, crumbled

Instructions

  1. Drain pineapple, reserving 3 tablespoons juice.
  2. Combine pineapple, reserved juice, sugar, butter or margarine, flour, and cheese. Mix well. Spoon mixture into a buttered 1 1/2 quart baking dish; top with cracker crumbs.
  3. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until bubbly.

Not just for holidays.. I fix this once every couple of weeks. And never have left overs. I did make a couple of changes.. just to short cut the recipe. Used the full can of pineapple and the juice, did not add sugar, cut the butter in half as well as 1/2 the flour. Yummy!
