Apricot Jam Bars

A little almond flour is used to give these delicious, straightforward jam bars a rustic texture and nutty flavor.

Ingredients

  1. 1 stick butter
  2. ½ cup white sugar
  3. 1 large egg
  4. ½ teaspoon almond extract (Optional)
  5. ½ teaspoon vanilla extract
  6. 1 cup all-purpose flour
  7. ½ cup almond flour
  8. 1 teaspoon baking powder
  9. ½ teaspoon salt
  10. 1 ¼ cups apricot jam, or as needed

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line an 8×8-inch baking dish with parchment paper.
  2. Beat butter and caster sugar together in a bowl until smooth; beat in egg, almond extract, and vanilla extract.
  3. Whisk flour, almond flour, baking powder, and salt together in a bowl. Stir flour mixture into butter mixture until a smooth dough forms.
  4. Press 1/2 of the dough into the prepared baking dish. Spread apricot jam evenly over the dough. Drop remaining dough in small spoonfuls evenly over the jam.
  5. Bake in the preheated oven until golden, about 25 minutes. Allow to cool before cutting into squares and serving.
  6. I used apricot jam, but any tart jam or marmalade works a treat in these slices.
