Apple Halva Loaf Cake

When I had Ottolenghi’s walnut halva cake, I realized I needed to use halva in more of my baking. It is really delectable. This apple cake recipe was modified by me to incorporate halva as well as tahini for good measure.

Yield: 1 9×5-inch loaf

Ingredients

  1. 1 cup all-purpose flour
  2. ¾ cup whole wheat pastry flour

  4. 1 teaspoon baking soda
  5. ¾ teaspoon ground cinnamon
  6. ½ teaspoon sea salt
  7. 1 apple, cut into small cubes
  8. ½ cup crumbled halva
  9. ½ cup butter, melted and cooled
  10. 2 large eggs
  11. ½ cup buttermilk
  12. ½ cup packed brown sugar
  13. 5 ½ tablespoons tahini
  14. 1 teaspoon vanilla extract
  15. 2 tablespoons turbinado sugar, or to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Mix all-purpose flour, whole wheat pastry flour, baking powder, baking soda, cinnamon, and salt together. Add apple and halva.
  3. Whisk melted butter, eggs, buttermilk, brown sugar, tahini, and vanilla extract together in another bowl. Fold into the flour mixture.

  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Tent with foil after 30 minutes to prevent over-browning.
  6. Cool in the pan for 5 to 10 minutes before inverting onto a wire rack to cool completely.
