This is a straightforward yet tasty variation on bread pudding that uses apples and cinnamon. Keep leftovers in the fridge. is available both hot and cold.

Ingredients

  1. ½ cup white sugar
  2. 1 teaspoon ground cinnamon
  3. 2 cups milk
  4. 2 eggs
  5. 2 tablespoons butter, softened, or more as needed
  6. 8 slices brioche bread
  7. 2 apples – peeled, cored, and shredded

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a glass, deep-dish pie dish.
  2. Stir together sugar and cinnamon in a small bowl. Whisk milk and eggs together in a separate bowl.
  3. Butter one side of each slice of bread, and cut into cubes. Spread 1/2 of the bread cubes into the prepared pie dish, sprinkle with 1/2 of the cinnamon-sugar mixture, and 1/2 of the shredded apples. Repeat layers once more with remaining bread cubes, cinnamon-sugar mixture, and apples. Pour milk-egg mixture over the top and let sit until bread cubes are moist, about 10 minutes.
  4. Bake in the preheated oven until top is crispy, 40 to 50 minutes. Let cool for at least 20 minutes before serving.

I made this for a Christmas Day brunch. It was moist and tasty. The shredded apples melt into the bread mixture. Make sure you use a pan at least 1 1/2 inches deep so it doesn’t get too dry.

10.21.20 I stopped at two stores today, neither of which (even Publix bakery) had brioche bread, so I ended up buying a loaf of Aldi Artisan Bakery Bread which worked pretty well. If I were to make this again, I know that I’d add some vanilla extract to the milk-egg mixture. Funny thing, my husband asked if that was shredded cheese on the top, and that’s what it looked like. Minor thing, but I think I’d chop the apples the next time instead of shredding. Buttered the bread slices, stacked them, and cut into cubes with my electric knife. Used my food processor for shredding the apples, so this really was a quick-and-easy recipe. Thanks for sharing.

I liked the final outcome, but there was not enough info. How big is the brioche bread loaf. They come in different sizes. How thick are the bread slices? What diameter deep dish glass pie plate? I cut 8 slices from a bakery loaf of brioche. I could only use five slices, there was too much with eight. Otherwise I cut the mixture back, and it was still good. Excellent wet/dry ratio!
