Yield: 1 9-inch pie

Ingredients

  1. 1 (15 ounce) package pastry for a double crust 9-inch pie, divided
  2. 6 cups peeled and sliced apples
  3. ½ cup crushed almonds
  4. 1 ¼ cups white sugar
  5. ½ cup brown sugar
  6. 2 tablespoons all-purpose flour
  7. 2 tablespoons honey
  8. 1 large egg yolk
  9. ½ teaspoon water
  10. ¼ teaspoon almond extract
  11. 1 teaspoon ground cinnamon, or to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Press 1 pie crust into a 9-inch pie pan.
  2. Toss apples, almonds, white sugar, brown sugar, and flour together in a bowl until apples and almonds are completely coated.

Tasted great and easy to make. I used red delicious apples and had a flood of liquid at the bottom of my pie even with a lattice top for venting.

This was my very FIRST pie! It was easy to make (even for a newbie) and it is delicious! This is a VERY sweet apple pie! I loved that the filling was made from scratch. Like the previous reviewer, I didn’t have any almond extract, so I used vanilla extract. The next time I make this recipe (and you better believe there will be a next time) I will sprinkle the almonds over the filling instead of mixing them in – cutting down on some of the crunch. HAPPY PI DAY! Thanks for the recipe, this one is a keeper!

Really quick and easy to throw together with pantry ingredients! 🙂 I had to substitute vanilla for the almond extract as I was out, but was still delicious!
