Lemon whippersnappers and lemon crinkles are both the same. Just like chocolate crinkle cookies, the dough is rolled into balls and dusted with powdered sugar. However, this dough has a lemon flavor.

Ingredients

  1. cooking spray
  2. 1 (15.25 ounce) package chocolate cake mix
  3. ¼ cup butter, melted
  4. 1 egg
  5. 2 cups marshmallows
  6. 1 (14 ounce) can sweetened condensed milk
  7. 12 ounces sweetened flaked coconut
  8. 1 cup sliced almonds
  9. 1 cup butterscotch chips
  10. 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking dish with cooking spray.
  2. Mix cake mix, butter, and egg together in a bowl until evenly mixed and crumbly; press into the prepared baking dish.
  3. Bake in the preheated oven until edges of crust begin to crisp, 10 to 12 minutes.
  4. Place marshmallows in a microwave-safe bowl; heat in microwave until melted, 20 to 40 seconds. Stir condensed milk, coconut, and almonds into melted marshmallows; spread filling evenly over crust.
  5. Combine butterscotch chips and chocolate chips in a microwave-safe bowl; heat in microwave, stirring every 20 to 30 seconds, until melted, about 1 minute. Spread mixture evenly over filling. Refrigerate until chocolate hardens, at least 30 minutes.

This is simple to make. I wouldn’t use a glass baking dish, as it was a bit difficult to remove. Even with the spray. This is very, very, sweet.

The only thing I changed was that I used just milk chocolate chips for the topping, as Almond Joy is made with milk chocolate. The cream layer was difficult to make as the marshmallow was hard to stir and I had to work fast to mix in the other ingredients before it got too hard. Any tips to make that part easier would be appreciated. I’m taking them as a donation for a silent auction supporting our youth group for church.
