Alexander’s Chocolate-Covered Peanuts

Three basic ingredients are used to make three delicious, crispy, chocolate-covered peanut clusters in the slow cooker.

Ingredients

  1. 18 ounces white almond bark, broken into pieces
  2. 2 cups semisweet chocolate chips, or more to taste
  3. 24 ounces lightly salted peanuts, or more to taste

Instructions

  1. Cook almond bark in a slow cooker on High, uncovered and stirring occasionally, until mostly melted, 5 to 10 minutes. Reduce the heat to Low and stir in chocolate chips. Cook and stir until chips are melted and mixture is dark in color, 5 to 10 minutes.
  2. Turn off the heat and stir in peanuts. Drop a spoonful onto a piece of parchment paper to test consistency; it should be thick and chunky. If it’s too loose and runny, stir in more chocolate chips and peanuts.
  3. Line several baking sheets with parchment paper. Use a melon baller to drop spoonfuls peanut mixture onto the prepared baking sheets. Let harden before serving, about 1 hour.
  4. This makes a lot of peanut clusters, so be sure to clear off some counter space beforehand. If you make larger clusters, they will take longer to harden.

I made these today and they turned out perfect! I also added a sprinkling of sea salt to the tops, since I love chocolate and salt. I didn’t have a ‘slow cooker’ so I just melted both on very low heat in a pan, which turned out just as good. I will make again

This is an easy easy recipe and fun to make. I played with it just a bit. The first batch I sprinkled just a little coarse sea salt on top, really not much just a few grains. The second and third batches I and added a wee bit of cinnamon to one batch and a bit of instant coffee granules in another.

Good stuff. I added walnuts as well for the second half of the batch. Cools nicely and tastes so rich you’ll only want one or two.
