I adore pancakes, and who doesn’t? I also adore lemon poppy seed muffins. Consequently, I combined the flavors in this fluffy pancake recipe one idle Sunday morning, and we all enjoyed them. Our weekend breakfasts taste better with it included, and it only takes a few minutes to prepare. On YOUR quiet Sunday morning, I hope you enjoy them.

Ingredients
- 2 ripe bananas
- ½ cup oats
- ¼ cup chocolate chips
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Mash bananas in a bowl with a fork until no lumps remain. Stir in oats and chocolate chips.
- Scoop small portions of batter onto a nonstick baking sheet.
- Bake in the preheated oven until golden brown, about 15 minutes. Cool for 2 to 5 minutes per serving.
- Substitute raisins for the chocolate chips if desired.

These are really good for breakfast! They also make a great healthier snack. So quick and easy to make. I’m glad I only made a half batch, because they get soft and a little soggy the next day. I just heated them in the microwave. I think I would prefer less chocolate chips and some nuts.
Make sure the bananas are very ripe to increase the natural sweetness.otherwise, the cookies can be a bit tart. My batch yielded about 17 cookies (rounded tablespoons) which calculates out to 1.2 Weight Watcher points per cookie. Not a bad snack if on a diet!

Very easy, very tasty. Took others suggestions of adding a bit more oatmeal and a heaping Tbsp of peanut. Are a few minutes out of the oven. Will definitely make these again. Thanks for the recipe.

Tasty! Used craisins in place of chocolate chips. Got 7 cookies (dropped by tablespoon ). A bit too soft. Baked at 350 for 12min—we’re getting brown on top. Will try 13-15min next time.
Tastes good, they are best served a little warm. Great way to use up over-ripe bananas and make a quick and healthy snack. You could easily do with just a little less chocolate chips. I have also used this recipe with a bit of added chia seeds and ground flax without much notice (which is great to get the family to eat more fiber but still feel like they are eating something yummy and sweet!)
I made this with the 3 ingredients the recipe called for, except I put it all in a pie plate as a single giant “cookie” and baked for 30 minutes instead. It’s more like baked oatmeal than a cookie to me, but it’s still delicious and I love it!! Fantastic way to get some whole grains in. I will definitely make this again with some more add-ins like raisins and unsweetened coconut. Thanks for sharing!
These are great, easy, healthy cookies! If you are making these you may want to put them in for an extra few minutes depending on the size.
A completely easy and healthy tidbit. It’s not exactly my idea of a cookie, but it definitely works as a little sweet snack. I added a few tbs of chopped walnuts, a little salt, vanilla, and cinnamon, plus a bit more oatmeal then a sprinkling of flour because it was still too wet.
Sorry to say, not a fan. Husband wasn’t fond of them, either. They’ve got a ‘rubbery’ texture to them. Baked them a bit longer than called for hoping because they were so gooey when we 1st took them out of the oven. Not sure if raisins vs. chocolate chips would have made a difference. I did pop the others into the freezer to see if they’re any better as a frozen treat. Will update accordingly. Thank you for sharing your recipe, OP.
Instead of chocolate chips, I used dried coconut and they turned out quite good! They are super easy to make and I will probably make them again! Though they did take a while to bake. And when they came out they looked kinda rubbery, but I took one bite and loved ’em!
I used raisins instead of chocolate chips then I made it again with raisins and chocolate chips. Yummy
These are yummy and healthy. More of a good snack rather than a dessert but for those who want a healthier option and less sugar this is great!
I had my first thru second grade club students make these cookies because they were so simple. The kids loved it. We found that this recipe size made just a few cookies which was perfect for our group size and timing. Personally I found the cookies to be a bit bland. A dash of salt, vanilla and cinnamon will likely give these cookies the flavor boost they need. I will make these again in club, but not likely at home.
Added a pinch of cinnamon and a dash of vanilla. Replace the chocolate chips with almonds or peanuts for a healthier twist!
For a vegan/whole food plant based cookie, it was very good. The recipe gives the option for raisins so I used them rather than chocolate chips to keep it a little healthier.
Just thought it tasted like something was missing
