Sarah’s Post-Workout Lemon Poppy Seed Bars

Ingredients

  1. 2 1/4 cups oat flour
  2. 1/2 cup vanilla protein powder
  3. 1/4 cup poppy seeds
  4. 1/2 teaspoon kosher salt
  5. 1 cup creamy cashew butter
  6. 1/2 cup honey
  7. 2 tablespoons coconut oil
  8. 2 teaspoons lemon extract
  9. Nonstick cooking spray
  10. 1/2 cup white chocolate chips, to garnish
  11. Flaky sea salt, to garnish

Instructions

  1. Whisk together the oat flour, protein powder, poppy seeds and kosher salt. Add the cashew butter, honey, coconut oil and lemon extract. Use your hands to mix it all together. It will be dry at first but will come together. You want the batter to be thick and firm.
  2. Spray an 8-by-8-inch baking pan with cooking spray. Line with a sheet of parchment paper with ends that extend about 2 inches over two sides of the pan. Press the dough down firmly with your hands into an even layer. Top with the chocolate chips and flaky sea salt and gently press into the dough. Chill in the fridge for 2 hours. Then cut into desired-size bars. Store in the fridge.

I only had almond flour to use (as you suggested as an alternate to oat flour)
The “dough” was tasty, but very/too loose and never hardened in the 2hrs in the fridge.

I love the idea of this recipe, though I don’t care for lemon poppy, so I make them with coconut and flax seed. They’re so good!

Used almond extract in lieu of lemon as I thought I had lemon in my pantry but did not. Turned out amazing will definitely make again and might try alternate flavors as well.

I did not have cashew butter so I used sunflower butter instead. Love the texture of these bars but probably wouldn’t use lemon extract next time. I don’t know if it’s the combo of the sunflower butter with the lemon extract but they seem bitter to me. Will try again with vanilla or almond extract and also use peanut butter powder in place of the vanilla protein powder. Texture is excellent, like fudge.

I just made these during my lunch break.  Super easy and really good.  I was concerned that they wouldn’t come together, but they did.  And I was hesitatant to add the white chocolate chips, but they make them SO much better.  I will make this again.
