Mexican Tacos

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10-ounce) can diced tomatoes and green chilies, undrained
  • 1 (1.25 ounce) package taco seasoning mix
  • 1/2 cup water
  • 12 taco shells
  • Your favorite taco toppings, such as shredded cheese, lettuce, tomatoes, sour cream, guacamole, and salsa

Instructions:

  1. In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
  2. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in the diced tomatoes and green chilies, taco seasoning mix, and water. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the sauce has thickened.
  4. Spoon the beef mixture into the taco shells. Top with your favorite taco toppings and serve.

Tips:

  • You can use any type of ground beef that you like. I used 90% lean ground beef, but you could also use ground turkey or chicken.
  • If you don’t have taco seasoning mix, you can make your own by combining 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • You can adjust the amount of taco seasoning to your liking. If you like your tacos spicy, you can add more taco seasoning.
  • You can serve the tacos with your favorite sides, such as rice, beans, or chips and salsa.
