Instructions
- Line a rimmed baking sheet with a silicone mat or parchment paper. Break 2 matzo sheets into small pieces. Stir 1 cup sugar and 1/3 cup corn syrup into 1/2 cup water in a saucepan fitted with a candy thermometer. Bring to a boil and cook until the mixture reaches 340 degrees F, about 15 minutes. Remove from the heat and, working quickly, stir in 2 tablespoons diced butter and 1 teaspoon each baking soda and vanilla (it will bubble up). Fold in the matzo, then spread out on the baking sheet and sprinkle with flaky salt. Let cool, then break into pieces.
