Mini Fruit Kebabs with Blueberry Yogurt Dip

Ingredients

  1. 4 blueberries
  2. 4 fresh pineapple chunks
  3. 4 raspberries
  4. 1 cup plain Greek yogurt
  5. 1 1/2 tablespoons honey
  6. 1 cup blueberries
  7. 1 vanilla bean, split lengthwise and seeds scraped out

Instructions

  1. For the kebabs: Thread the blueberries, pineapple chunks and raspberries onto small 3 1/2-inch bamboo skewers in any order you like.
  2. For the dip: Add the Greek yogurt, honey, blueberries and vanilla seeds to a blender. Blend until smooth.
  3. Serve the fruit kebabs with the yogurt dip.

This dip was way too sweet. Other than that, it was easy and a nice consistency. I’ll make it again but with only 1Tb honey.
