Homemade Cream Cheese

Ingredients

  1. 1 quart (4 cups) cream or whole milk (or a mix of both)
  2. One .05-ounce packet cream cheese starter
  3. Kosher salt

Instructions

  1. Set up your grill for low, even heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides.
  2. Slowly heat the milk/cream over low heat to 86 degrees F. Remove from the heat. Mix in the starter packet, mixing for no more than 15 seconds. Allow to sit at room temperature for at least 12 hours.
  3. The next day: Ladle the solids into a cheesecloth-lined strainer set over a mixing bowl. Gather up the cheesecloth to cover the surface and refrigerate overnight, allowing the cheese to drain and firm up.
  4. The next day, pick up the cheesecloth and pour the cream cheese into a mixing bowl. Season with salt and stir to combine. (If you’d like a firmer cheese, continue to press.)

Made it exactly like Symon did on his show but inside. So far it’s great. Went to Amazon. I punched in cream cheese starter and cheese starter is all they had so I bought it and used it. So far so good.

I am SO frustrated! What if you don’t have a BBQ grill? There must be some way to do these things in my oven but I don’t see any substitute instructions for that problem. Pretty soon, grills will be illegal to use due to use of wood, charcoal, or propane-to say nothing of the cost of these items,now. So buying one, which I was going to do, is out of the question, as there is no point in that now. I was going to buy one earlier this spring-glad I didn’t waste that money, now! Also, finding a BBQ grill is becoming impossible even if I could afford it or the new regulations wouldn’t make it impossible to use one! So, what are we to do with all of these wonderful recipes? There are so many BBQ recipes that I want to try out!

Cultures for Health has the starter and the cheese salt. Also the butter muslin if you want that. The starter says not to use ultra-pasteurized milk. That’s what is hard to find!

Where do I buy starter and how much, do I need it always comes in grams

Need o give real ounces for the starter. I did 8 cups and the starter said 1 package .60z per gallon. I put 2 pkgs because I put 8 cups. I let it sit 12 hrs and nothing but it didn’t sour. After 12 hrs I added two more packages and now it is working. Pleased provide what starter so we put the right measurements in.

I have never made anything with a starter so this is a novice run for me. After reading up on starter for cream cheese and searching Amazon I am still confused. Can anyone recommend which cream cheese starter to use, please? TIA!!!
